Directions
Step 1
In a medium bowl, break the matzo into 2-inch items. Pour 2 cups of sizzling water over the matzo and soak till softened, 2–3 minutes. Drain in a colander, then rinse the matzo with chilly water and drain once more, squeezing out extra water.
Step 2
In a second medium bowl, beat the eggs. Stir within the matzo and season with salt and black pepper.
Step 3
In a big skillet over medium warmth, soften the butter. When the froth subsides, add the matzo combination and cook dinner, stirring often, till evenly browned and damaged up into giant fluffy curds, 4–5 minutes. Divide the matzo brei amongst 4 plates and serve instantly.
